St Hallett has a large rich resource of highly sought after and valuable old-vine plantings through their long-term relationships with growers from the Barossa. This provides their winemaking team with a huge diversity of fruit which allows them to constantly strive for excellence by adapting their techniques for each vintage and each parcel of fruit. St Hallett's meticulous attention to detail and quality can easily be seen by their handling of Shiraz. Their winemaking team keeps separate more than 200 different parcels of Shiraz each vintage and selects the best in order to ensure tailored fermentation and maturation.
