The first fermentation is done Cru by Cru, individual batches are kept separate, preserving the unique characters of the vineyards. On average, the blend comprises 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier.

Intense aromas of honey on toast, with a delicate fine bead, and pale amber gold colour. There is richness and outstanding complexity to the nose, showing sweet fruit notes, vanilla, and toasty biscuity characters. Peaches, butter, almonds and citrus complete the palate alongside the refreshing dryness of very high quality Champagne fruit. Clean, crisp, biscuity, delicious.

The Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses.
Bollinger, founded in 1829, is one of Champagne's few remaining family-owned Grande Marque houses. Located in Ay, in the heart of the Côte des Noirs, it is renowned for the high percentage of Pinot Noir it uses and for the extra aging on the lees that its Champagnes receive. Bollinger is dedicated to producing a consistent and distinctive style of Champagne. Bollinger’s wines are predicated by their unique vineyards: rich, assertive and with great power, yet always with finesse.
In 2006 the prestigious French wine magazine La Revue du Vin de France surveyed the most significant group of sommeliers and wine writers for them to nominate the top 50 Champagne Houses which would be regarded as the most responsible for the greatness of Champagne as a unique wine region. Bollinger was selected as the Number #1 House by this group.
Vinification of Champagne wines in oak barrels is unique to Bollinger, a sign of dedication to quality and the affirmation of house style. From the careful selection of the best musts at harvest, to the prolonged ageing of wines in their cellars Bollinger ensures this high quality is maintained. Bollinger's choice to use oak during the making process of champagne gives their wines and a distinct identity of style.
To reinforce its commitment to style and quality, Bollinger launched its Charter of Ethics and Quality in 1992 (reinforced by its Ten Commitments), which guarantees the continuity of the policy of the House for the years to come.
Bollinger is crafted to be a great wine in its own right, as well as being a great Champagne. After bottling, the period of carbonic fermentation and cellar ageing are conducted under natural cork, a luxuriant measure which offers better protection against oxidization, as opposed to the usual metal crown cap. This method, seldom nowadays seen in Champagne, is a guarantee of freshness, ensuring sweet aromas, and the retainment of vital fruit bouquets.
