Great colour of light crimson pink. It’s made from cabernet and the resulting aromatics and light flavoursome palate captured this variety perfectly."Ray Jordan, West Australian The winemaker says: Colour: Like I’ve always said; fuchsia pink, maybe toffee apple red! Nose: If you think strawberries and cream you would be spot on. Certainly some summer pudding notes as well. Palate:This is probably the most savoury we have made this wine. There are the unmistakable primary berry fruit characters but also because of the complexity in the blend we have now introduced some spicy elements. All in all a wine we believe is a benchmark Australian style. This wine should be well chilled and consumed before we bring out the 2010 vintage in twelve months time. Gorgeous! – Paul Boulden, Winemaker Sandalford Wines Winery/Label Information: This wine was made as a Rosé from the very first day in the vineyard. All four varieties were picked on one night and crushed to a red fermenter for 24 hours skin contact time at a very low temperature. Once the desired colour and flavour was attained the juice was drained from the solids part of the fruit. This juice was then clarified prior to fermentation at cool temperatures below 10 degrees C to maintain fruit integrity. At the desired sugar level the fermentation was ceased followed by immediate stabilisation, clarification and bottling. Pristine fruit in a bottle is a more than apt way to describe this style. - Sandalford Wines
