Henschke’s 2007 Cyril Henschke Cabernet again shows the quality of their estate fruit from a very difficult and very low yielding vintage. A deep crimson in the glass, the 2007 shows intense dark berry fruits, complex herbs, cassis and toasty vanillin oak characters which envelope the nose. The palate is full of fruit and well balanced oak with lingering flavours that delight for a lengthy period of time. Unusually this vintage has a much higher proportion of Merlot with a small additional component of Cabernet Franc making it reminiscent of Bordeaux.

“The colour is not so great. There’s sexy top quality French oak contributing cedar and vanilla, a mix of sweet blackcurrant and red currant fruit with a light mintiness and dried herb. The tannins are not top rate but they feel genuine and good, playing nicely in the wine - supple almost. It has length, good flavour and gives an all round positive impression. Top outcome for a tricky vintage. I’ve written ‘prolly 93′ at the end of my note - so let’s run with that over 92.”

Nose: Sweet vanilla and cedar aromas mesh beautifully with the bouquet of blueberries, violets and cassis.

The Cabernet Sauvignon label carries the name Cyril Henschke (1924-1979) as a tribute to one of Australia’s outstanding winemaking pioneers, renowned for the production of varietal table wines, with the accent on quality and flavour. Cyril Henschke planted cabernet sauvignon at Eden Valley in the 1960s.
The 2007 vintage shaped up to be another high quality year but with significantly reduced yields in Eden Valley. The highly publicised drought of 2006 was reported as the worst ever. February was recorded as the hottest for 100 years, which brought the already reduced crop to an earlier ripening phase. – Henschke Wines
