The Midnight Cuvee – so named because the grapes are picked in the cool of the night – is bright, pale gold in colour, with a soft, consistent bead. The nose is delicate, with complex characters of freshly baked bread and yeast. Some nuttiness and light stone fruit aromas are evident too. Gentle bubbles caress the palate to give a silky mouth feel. The rich mid palate exhibits great texture and a fine acid backbone. This is a wine of great elegance, balance and finesse, with a long, clean and lingering finish. Reminiscent of a nice vintage Champagne, and a fraction of their price.

Colour: Brilliant pale straw with a fine bead of gentle bubbles.
Nose: The aroma is delicate and complex with the yeast autolysis character of freshly baked bread complimented by citrus fruits and hazelnuts.
Palate: The bright, green apple flavoured palate exhibits a fine acid backbone which enhances the fresh doughy yeast notes and fine refreshing effervescence.
