In the glass the Billecart-Salmon NV is bright pale straw with gold highlight and a noticeably fine and very persistent bead. The nose shows quite intense and complex aromas of biscuits and toast from the yeast lees and crisp citrus notes with some delightful nutty overtones. The palate is also quite yeasty and bready with toasty notes and creaminess supported by a very long finish with firm acidity. Excellent multi vintage Champagne.

Stringent quality has been the key motivating factor behind the Billecart-Salmon family, established at Mareuil-sur-Aÿ since the nineteenth century.
It justifies the trust shown, right from the start, by the wine merchants from the newly established United States of America, The Russian nobility and later by Prince Charles of Bavaria, one of the most prestigious courts of Europe in the second half of the nineteenth century. The grapes used are Pinot Meunier, Pinot Noir and Chardonnay sourced from specially selected vineyards in the department of the Marne.
